These days Tramonti is Monteverde's premiere destination for authentic Italian cuisine. He imports all the fine Italian charcuterie, pasta flour and olive oil directly from Italy and gets his sausage from another Costa Rican Italian.

One of his favorite dishes - and mine too - is the house made eggplant ravioli,$14, in red sauce sprinkled with freshly grated parmesan cheese. More than one local in town says that Tramonti is the place to go for pizza. Giovanni designed and made his wood-burning ovens for seven different restaurants including Tramonti. The pizzas, topped with Italian sausage, onion and local Monteverde cheese, come out of the oven piping hot and crispy.
